I’ve already complained like a broken record about how it is so unbearably hot where I live, so I will refrain from continuing to rant about it! Anyway, we have been trying hard to beat the heat. Some lunchtimes all Luke says is “pot-sic-le” or “smooooo-thie” so I have been trying to get creative and make healthy smoothies and popsicles for the little man!
Today I’m going to share one of our favorite quick and easy popsicle recipes. The best part about them is that you can give them to your babies completely guilt free. Healthy, yummy and easy? Win, win, win.
What you need:
1 1/2 cups fruit (for the photos above we used blueberries, but strawberries and watermelon are both super yummy as well!)
3/4 cups vanilla flavored Greek yogurt
1 tablespoon honey (I didn’t want mine super sweet, you can add more honey if you’d like!)
First, wash your fruit and put it in your food processor or blender. If you have a “juice” option, use that. If your blender has trouble getting going (mine is old and crappy) then add a little water to get your fruit as liquid as possible. Watermelon is obviously the easiest to blend. Next, add your Greek yogurt and honey. Pulse until all ingredients are blended together. Taste your mixture with a spoon to make sure you like the taste (if you want your popsicles sweeter, add more honey here). Once mixture tastes to your satisfaction, pour into your popsicle molds and freeze! Recipe yields 6-8 popsicles. Ours only take about 4 hours to freeze.

Of course, we have to have a photo of the littles, no? Even grumpy Nora (I hate teething) wanted to chew on the popsicle stick once Luke was done with his, haha. She wants to be just like her big brother.
