Making a delicious homemade apple pie is about to become super easy! Apple pie filling has got to be one of the smartest things I’ve ever canned. I love being able to just grab a jar of pie filling from my pantry, dump it into a crust (fresh or frozen) and having an easy and delicious dessert stat. Bonus, the filling works great for apple crisps as well.
Here’s the recipe:
4 1/2 cups sugar
1 cup cornstarch
2 tsp. cinnamon
1/2 tsp. nutmeg
2 cups applesauce (this can be substituted for water)
3 tablespoons lemon juice
At least 25 good sized apples
Combine in large saucepan 5 cups water, sugar, cornstarch, cinnamon and nutmeg. Cook until boiling, thick and bubbly. Then add your remaining 3 cups water and two cups applesauce to boiling mixture. Remove from heat and add your lemon juice. Set aside.
In a large bowl peel, core and slice all your apples. Then, dump your syrup over your apples and stir to combine.
To can, divide mixture into clean quart sized jars leaving about 1 inch of head space. Process in a boiling water bath for 20 minutes.
Let your processed cans sit for 24 hours before testing seals. This recipe yields about 5 quart sized jars and will feel a regular 8-9 inch pie tin.
