Chocolate rice pudding is a delicious take on the classic rice pudding that we all know and love!
Have you ever had Chocolate rice pudding? There used to be a restaurant dedicated to rice pudding in Provo, where I went to college. It was called Pudding on the Rice, and it was basically my favorite thing ever. They had SO many different kinds of rice pudding, and everything I tried was amazing. I would usually get chocolate, but my second favorite was the coconut one. Last week I had some leftover rice I wanted to use up and decided it was time I finally re-create the chocolate rice pudding I have been missing for so many years now. It is so easy!
Do you eat rice pudding cold, at room temperature, or hot?
I kind of like it at room temperature the best, but I will eat it at any temperature. I do not discriminate.
You guys, this is SO good. I topped the pudding with chocolate shavings, but I think you could also add chocolate chips, toasted coconut or cinnamon to make it even more fancy!
Here are some of the things I use every time I make rice pudding:
Chocolate Rice Pudding - a fun twist on classic rice pudding. Perfect use for leftover rice.
- 2 cups cooked white rice
- 2 cups milk
- 3 Tbsp butter
- 1/3 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 1/2 Tbsp cocoa
Add all ingredients into a sauce pan and mix together over medium low heat.
Bring to a soft boil and stir constantly to prevent burning.
Keep stirring until mixture is thickened (it should be 10 to 15 minutes from the time you start cooking.) Let pudding cool a bit before serving.
Serve at room temperature, hot or cold!
