Have you ever had Chocolate rice pudding? There used to be a restaurant dedicated to rice pudding in Provo, where I went to college. It was called Pudding on the Rice, and it was basically my favorite thing ever. They had SO many different kinds of rice pudding, and everything I tried was amazing. I would usually get chocolate, but my second favorite was the coconut one.  Last week I had some leftover rice I wanted to use up and decided it was time I finally re-create the chocolate rice pudding I have been missing for so many years now. It is so easy!

Do you eat rice pudding cold, at room temperature, or hot?

I kind of like it at room temperature the best, but I will eat it at any temperature. I do not discriminate.

You guys, this is SO good. I topped the pudding with chocolate shavings, but I think you could also add chocolate chips, toasted coconut or cinnamon to make it even more fancy!

Chocolate Rice Pudding - a fun twist on classic rice pudding. Perfect use for leftover rice.

Ingredients
  • 2 cups cooked white rice
  • 2 cups milk
  • 3 Tbsp butter
  • 1/3 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 Tbsp cocoa
Instructions
  1. Add all ingredients into a sauce pan and mix together over medium low heat.

  2. Bring to a soft boil and stir constantly to prevent burning.

  3. Keep stirring until mixture is thickened (it should be 10 to 15 minutes from the time you start cooking.) Let pudding cool a bit before serving.

  4. Serve at room temperature, hot or cold!
