This week marks my fourth anniversary of marriage to the cute husband I get to call mine! It’s the 19th, and we aren’t going to be able to celebrate on that day because I’ll be at Blog Elevated Thursday through Saturday. I like special occasions to last longer than one day – a week or a month is preferable! so I wanted to make a nice, romantic and healthy meal at home to surprise him with this week. I’m still on a low-cal diet and I felt like it was going to be hard to find something I could eat, that he would also enjoy but I was determined to make it work. I also really wanted it to look nice and different from the every day so I made this romantical table runner covered in memories. I went with a healthy frozen meal to keep the food preparation easy.
In order to keep my healthy habits up, I’ve been eating the same thing for dinner every night. These black bean tacos. I still love them, but I have been thinking that after a month, it’s time to add a few other things into the mix. Also, tacos do not strike me as a “romantic” so for this meal, instead of going to pinterest, which is super dangerous when you’re hungry because of all the treats, I decided to try these Lean Cuisine Honestly Good meals. The easier it is, the better it works for me! I saw them in the freezer aisle at Walmart, and they were on rollback, then checked the back and they were only 320 calories each so it was a no-brainer. I love to leave a little room for bread…
To make the table look nice, I grabbed a few candles and made this table runner from kraft paper. I was feeling sentimental, so using a white paint marker I penned a list of happy memories that we’ve had together since we’ve been married. Once I got going I couldn’t stop.
Like most frozen meals they were quite easy to prepare, but they tasted so much better. Mine was the salmon. MMMM. Since the veggies are just steamed, my husband put the sauce on his and liked them that way, I opted to keep it simple and just add a little salt.
I highly recommend these if you’re looking for easy, healthy meals. There is a coupon right now too, making them less than $2.50 a pop!
