Pro Tips:
I have started buying pre chopped frozen onions at the grocery store and they work great in this easy taco soup recipe. Seriously such a time saver and they still have a great flavor. I've been using them in tons of recipes lately.
Taco soup freezes well for up to six months. Freeze right after cooking, before adding toppings, in an airtight container.
I love recipes that are easily adapted and customizable. This is one of those recipes. If you need to substitute a different type of bean or veggie, go for it.
Our favorite toppings include: cheese, sour cream or greek yogurt, chip strips, guacamole or avocado and cilantro.
If you love soup like we do you also need to check out our easy lasagna soup or our copycat Zuppa Toscana.
