Place the chicken in the slow cooker. Add diced onion and cream of chicken soup on top of the chicken.
Cover and cook on low 7-8 hours or high 3-4 hours.
Prepare 1 recipe yellow rice or, if using a box, according to box directions.
Shred the cooked chicken. Add prepared rice, cheese, corn, and any optional veggies like broccoli or spinach. Stir and cover.
Allow cheese to melt and the whole dish to heat through. Serve.

This is a great make-ahead meal.Make ahead instructions:Prepare one recipe yellow rice up to two days before, and cook chicken, according to the directions above, up to one day before. Shred chicken and keep refrigerated.On the day of serving, add chicken, rice, and other ingredients to the slow cooker until cheese is melty and the whole dish is heated through. Serve!
