Heat a pot of salted water to boil. When water reaches a full boil, add rice noodles and cook according to the package directions (about 4-5 minutes).
While waiting for the water to boil, prepare the sauce. In a small bowl, stir together brown sugar, tamari/soy sauce, sriracha, and sesame oil.
In a large skillet melt 1 tablespoon olive oil over medium-low heat. Add the crushed red pepper to the pan, add zucchini to the pan, increase heat to high, and stir fry until just charred; 2-3 minutes. Stir in garlic and cook for one minute.
Add drained noodles to the skillet along with the prepared sauce. Turn the heat on to medium-low, and stir until everything is coated well with the sauce. Top with a protein, if desired. Garnish with green onions and cilantro and serve.
