Tzatziki Sauce:

plain Greek yogurt

a small cucumber
finely diced or shredded

cloves
garlic
pressed

fresh dill or 1 teaspoon dried dill

lemon juice
Kosher salt to taste

olive oil
Bowls:

Lemon Brown Rice

Grilled Chicken Breasts

Cucumber

Cherry Tomatoes

Instructions
Tzatziki Sauce:
Combine all ingredients and chill for 20 minutes or longer to let the flavors can meld.
Bowls:
Make a batch of
lemon brown rice
.
Grill chicken and let cool.
Stir some tzatziki into a bowl with cooled chicken and let sit while you prep the other ingredients.
Chop cucumber, cherry tomatoes, red onion and greek olives.
Place toppings over the lemon brown rice, and then add your tzatziki sauce on top of all of it. Enjoy!
Notes
Store leftovers in the fridge in an airtight container for 7 days.
