Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 a small cucumber finely diced or shredded
  • 2 cloves garlic pressed
  • 1 tablespoon fresh dill or 1 tsp dried dill
  • 1 tablespoon lemon juice
  • Kosher salt to taste
  • 2 tablespoons olive oil


  • 3 cups Lemon Brown Rice
  • 6 Grilled Chicken Breasts
  • 1 Cucumber
  • 1 cup Cherry Tomatoes
  • 1/2 cup Red Onion chopped
  • 1/2 cup Greek Olives
  • 12 Lemon Slices


Tzatziki Sauce:

  • Combine all ingredients and chill for 20 minutes or longer to let the flavors can meld.


  • Make a batch of lemon brown rice.
  • Grill chicken and let cool.
  • Stir some tzatziki into a bowl with cooled chicken and let sit while you prep the other ingredients.
  • Chop cucumber, cherry tomatoes, red onion and greek olives.
  • Place toppings over the lemon brown rice, and then add your tzatziki sauce on top of all of it. Enjoy!


Store leftovers in the fridge in an airtight container for 7 days.
