Spinach Poppyseed Salad

The perfect healthy summer salad for any occasion! This may be my absolute favorite salad recipe!

Ingredients

For the Salad

  • 1/2 lb . fresh baby spinach
  • 1/2 head of romaine lettuce
  • sliced mushrooms
  • 1 can mandarin oranges
  • red seedless grapes halved
  • 1 avocado sliced
  • grated swiss cheese your preferred amount, I use about a handful
  • 3/4 Tbls . cottage cheese

For the Dressing

  • 1/2 Tbls . poppy seeds
  • 1 or 2 Tbls. grated red onion
  • 1/2 cup canola oil
  • 1/2 tsp . salt
  • 1/4 cup sugar
  • 1/4 tsp . dry mustard
  • 1/4 cup red wine vinegar

Instructions

For the Salad

  • Toss all ingredients together.

For the Dressing

  • Mix all ingredients together in a blender. Don't pour dressing over salad until right before serving.

Notes

Store dressing and salad separately. Store in the fridge in an airtight container.
