Spinach Poppyseed Salad

Okay this is my ABSOLUTE FAVORITE SALAD of all time! Literally so delicious and so easy to throw together! The perfect pairing of sweet and salty flavors, so good!
The other day I was making my very favorite salad (yes, my very favorite salad in the whole wide world) for a get together, and it dawned on me that I hadn't shared it on the blog yet... WHAT?? I immediately snapped some pictures because I was ashamed of myself. How dare I keep this salad to myself? Mmm. I am salivating even now looking at the pictures. I don't know what it is exactly, but this salad is the perfect marriage of sweet and savory ingredients that literally melt in your mouth. Every time I eat it I bask in the fact that I am enjoying something so healthy, that's good enough to be a dessert. Yes, that is how much I love it.

Spinach Poppyseed Salad

The perfect healthy summer salad for any occasion! This may be my absolute favorite salad recipe!

Ingredients

For the Salad

  • ½ lb . fresh baby spinach
  • ½ head of romaine lettuce
  • sliced mushrooms
  • 1 can mandarin oranges
  • red seedless grapes halved
  • 1 avocado sliced
  • grated swiss cheese your preferred amount, I use about a handful
  • ¾ Tbls . cottage cheese

For the Dressing

Instructions

For the Salad

  • Toss all ingredients together.

For the Dressing

  • Mix all ingredients together in a blender. Don't pour dressing over salad until right before serving.

Notes

Store dressing and salad separately. Store in the fridge in an airtight container.
