Instructions
Prepare
Jalapeño Ranch
at least 30 minutes ahead of time and store in the fridge.
Wrap corn tortillas in a damp paper towel and put that inside a ziploc bag. Leave the bag open, and steam in the microwave for one minute.
Rinse and drain black beans, wash and chop lettuce and grate string cheese.
Assemble tacos by topping one tortilla with half cup lettuce, ¼ cup beans, half the string cheese and 1 tablespoon dressing.
Notes
Make the
Jalapeño Ranch Dip recipe
ahead of time.
You do not have to use string cheese for this - any mozzarella cheese will work.
I don't heat the black beans for these tacos - but you can if you prefer them warm.
Pico de Gallo, avocado, salsa, hot sauce, and corn are all great additions to these Black Bean tacos!
