Instructions
Prepare this easy
brownie recipe
or make brownies from a mix. Allow to cool while you prepare the buckeye layers.
Peanut Butter Buckeye Filling
Add peanut butter to a large mixing bowl.
Add melted butter, salt, and vanilla to the mixing bowl and stir together.
Pour powdered sugar into the peanut butter mixture slowly, using a hand mixer to mix.
Mix until the ingredients are well incorporated. It will look clumpy as shown in the photo above.
Ganache Topping
Melt butter in a small saucepan, add heavy cream to butter, and mix well. When mixture comes to a boil, remove from heat.
Pour butter and cream mixture over chocolate chips.
Stir continuously with a rubber spatula.
Keep stirring until the ganache is completely mixed.
Buckeye Brownies
Put peanut butter buckeye filling on top of cooled brownies.
Spread the peanut butter layer across the brownies with a spatula until you have a smooth, even layer.
Pour ganache on top of peanut butter layer and spread evenly.
Allow the ganache layer to cool and set, then cut brownies into squares.
