For the Soup
2TeaspoonOlive Oil
2PoundsHamburger
1OnionChopped
4ClovesMinced Garlic
2TeaspoonsDried Oregano
½TeaspoonCrushed Red Pepper Flakes
2TablespoonsTomato Paste
28Ounce CanFire Roasted Diced Tomatoes
6CupsChicken Stock
8OuncesRotini Pasta
2Bay Leaves
½CupFresh Basil
For the Cheese Mixture
8OuncesCottage Cheese
½CupParmesan Cheese
¼TeaspoonSalt
⅛TeaspoonPepper
1 ½CupsMozzarella CheeseShredded
Instructions
Grab a large pot or stew pan. Heat oil over medium heat.
Add hamburger, and cook until just browned.
Add onions and cook until soft.
Next, add in garlic, oregano, red pepper flakes, and tomato paste and stir until well combined. Cook for a few minutes, until tomato paste turns brownish in color.
Add in tomatoes, chicken stock, and bay leaves and mix to combine. Bring mixture to a boil and then reduce heat to low and let simmer for 30 minutes.
While soup is simmering, cook and drain your noodles to al dente.
Then, in a separate small bowl combine all ingredients for your cheese mixture.
When ready to serve, add noodles and cheese into each bowl, then ladle soup over the top!
For best results, refrigerate leftover cheese, noodles and soup separately.

What do you serve with lasagna soup?
We love serving this with some warm french bread or a light green salad and some crusty fresh bread.
Why am I cooking the noodles only to al dente?
Once you place the noodles in the soup they will start to absorb the liquid in the soup and begin to soften. For this reason I like to store my leftover noodles separately from my soup so they don't soak up all the broth overnight.
Can you freeze lasagna soup?
Yes! The base of the soup can absolutely be frozen, but the cheesy mixture and the noodles are best made fresh.
