Eyeball Cake Bites are a cute Halloween treat that is as delicious as it is cute. Made with vanilla cake and homemade cream cheese frosting, everyone loves them!
Prepare cake mix according to the directions on the box.
Add green food coloring, if using.
Bake cake according to box directions, til a fork comes out clean.
Cream Cheese Frosting
Add softened cream cheese and butter into a large mixing bowl. Beat with a hand mixer for 2 minutes. (Photos 1 and 2)
Add powdered sugar and vanilla, mix with the hand mixer until smooth. (Photo 3)
Add green food coloring (optionaand mix well.
How to Make Cake Balls
Crumble the entire cake up in a large mixing bowl.
Combine cake with the frosting until it's mixed well.
Refrigerate for 15-20 minutes. Prepare cookie sheets with parchment paper.
Roll chilled cake and frosting mixture into 2-inch balls and put them on the prepared cookie sheet. Put cake balls into the freezer for an hour.
How to Decorate Eyeball Cake Bites
Pull cake balls out of the freezer and get out your decorating supplies.
Melt the white candy according to package directions. Make sure it is completely melted and stirs easily.
Dip each cake ball into the melted candy coating and cover it. Carefully place it on the cookie sheet and use your thumb or finger to make a little divot in the top.
Once you've dipped all of the cake balls, add a circle of green icing to the divot, and then top each one with a candy eyeball.

Pro Tips:I find it's easiest to use my hands to mix the cake and frosting. Wash hands and remove jewelry before doing this! Tips for Melting Candy:Be sure to follow the directions exactly, candy melts can be finicky and every brand is different. If you want to thin the candy coating a little bit, use pure vegetable shortening. Do not use water, milk, oil, or any other liquid.
