When Bryce and I first graduated college we had the opportunity to live in New York City for three months while Bryce trained for his new job. Boy, I love that city. One of the best parts was that we got to spend a lot more time with Bryce's brother Chris and his wife (my friend) Michael who lived just outside the city. They took such good care of us and had us out for dinner practically every Sunday. One of the first Sundays we were there Mike made this Thousand Island Salmon and we have been hooked ever since! Like, eat-once-a-week hooked. Best salmon ever hooked. It is easy, and delicious, and I promise you won't regret adding this recipe to your repertoire!
All you need is:
4 salmon filets
½ bottle of low fat thousand island dressing
1 lemon
1 red onion
Cut out a foil square for each filet and place salmon in the middle of the square on a cookie sheet. Pour a think line of thousand island down the middle of each filet and rub around with a spoon to cover the top. Cut your lemon in half and use one half to squeeze a bit of lemon juice on each filet over the top of the dressing. Cut the remaining lemon into slices and layer over filets. Then, thinly slice the red onion and layer over salmon. Fold up the corners of each tin foil square to keep sauce from running out while cooking. Cook at 375 for 15-20 minutes and ENJOY!
