Thanksgiving Leftover Recipe

This quiche is a creative way to use leftover mashed potatoes, turkey, stuffing, and any green veggies you have. The mashed potato crust is a real star. Go ahead, try it for yourself.

Leftovers

  • Mashed Potatoes
  • Turkey
  • Stuffing
  • Green Veggies (Broccoli, Spinach, Green Beans, Etc.)
  • Cheese

Directions

First you prep the ingredients you will be using and pre-bake the crust.

  1. Grate cheddar cheese.
  2. Chop leftover turkey into cubes.
  3. Chop spinach, parsley, and any other leftover vegetables you have that you want to throw in.
  4. Assemble mashed potato crust (directions below.)

Mashed Potato Crust

  1. Preheat oven to 350ยฐ f.
  2. Grease a 9-inch deep-dish pie plate on the bottom and sides.
  3. Press mashed potatoes onto the bottom and up the sides of the pie plate. Brush with 1 tablespoon oil.
  4. Bake the mashed potato crust for 30 minutes or until the edges are golden brown.

Custard

  1. Add eggs to a medium mixing bowl.
  2. Pour half and half in with the eggs and whisk together.
  3. Next, add nutmeg, salt, and pepper. 
  4. Whisk together until incorporated.

Assemble and Bake

  1. Sprinkle the stuffing and turkey in the baked mashed potato crust.
  2. Next, sprinkle on the cheese and parsley. Season with a little salt and pepper.
  3. Pour the custard over everything into the quiche.
  4. Bake at 350 degrees F until set, 45 minutes to 50 minutes.

Let cool at least 30 minutes before serving. Serve warm or at room temperature.

Variations

You can use any fillings you want in this quiche.

This recipe is pretty forgiving when it comes to the fillings. You can add more vegetables, add ham if you have some laying around, whatever you like.ย
