Red, white, and blue dessert is perfect for the 4th of July, a Memorial Day picnic or anytime that watermelon is in season! Watermelon Fruit Cake

So, when I first made this it was such a hit that now my family keeps asking for it whenever watermelon is in season! It's a crowd-pleaser and honestly, it's pretty easy. Just make sure you keep paper towels handy.

How to Make a Watermelon Cake with Fresh Fruit

Ingredients:

  • Watermelon
  • Blueberries
  • Raspberries
  • Strawberries
  • Dragon fruit

Materials needed:

  • Toothpicks
  • Cookie cutter
  • Knife
  • Bowls (2 different sizes)
  • Cake plate
  • Paper towels

Prep:

  • Wash any berries or other fruit that you will be using with vinegar fruit wash and dry them thoroughly. Keep berries in the refrigerator until you're ready to decorate the watermelon cake.
  • Slice and chill any other fruit that you will be using as well. I used this small cookie cutter to make stars out of dragon fruit and used some of the extra pieces from that to make the scalloped design as well.

How to Cut the Watermelon

  1. Cut the watermelon ends off and then carefully remove the rind from all sides.
  2. Next, cut the watermelon cylinder into four smaller slices about equal in size.
  3. Use the first bowl to guide you as you clean up the edges of  2 watermelon slices. Use the second, smaller bowl to do the same, making the top layers smaller than the first.
  4. Cut one of the smaller slices in half lengthwise, then assemble the cake pieces, like you see in photo 4. Insert toothpicks or skewers into the cake layers so that the cake stays together.

How to Decorate a Watermelon Cake with Fresh Fruit

Next, line the 'shelf' of the cake with blueberries or other fruits. Use toothpicks to keep fruit in place, especially the pieces you want to put on the sides.

Watermelon Cake Pro Tips:

  • You will need a lot of towels or paper towels on hand when you slice the watermelon into a cake shape.
  • Don't throw away any watermelon, even the small bits that you shave off the sides are delicious. You can use them to make a refreshing Watermelon Slush or Watermelon Feta Salad! 
  • Keep fresh fruit cake refrigerated until ready to serve.

How to transport a Watermelon Cake:

  • Make sure that the toothpicks or skewers are keeping the cake in place, then wrap the cake in plastic wrap. Put the cake plate onto a cookie sheet or tray to catch any rogue juices.
  • If you can, hold the cake on your lap while someone else drives. If you are driving, I would put the cake onto the floor inside a cooler or cardboard box.
