If you don’t know how to make corn salsa get excited because this is literally the BEST Corn Salsa recipe! Also known as cowboy caviar.

Corn Salsa

It is light, healthy, and freaking delicious! Obviously the beans, avocados and veggies in this corn salsa are yummy, but what really takes it over the edge is the light vinnaigrette that goes over the top! I swear it is so good I could drink it! Plus, it helps keep the avocados fresh for longer!

Honestly, it doesn’t get much easier than a healthy and delicious appetizer does it!? I can literally throw this cowboy caviar together in five minutes and be ready to go to any party or gathering!

Plus, let me tell you, this recipe is definitely a crowd pleaser! I get requests to bring it all the time. Just don’t be surprised when it evaporates before your very eyes… because this corn salsa is just that good. 

How to Make Corn Salsa

Let me show you just how simple it is to make.

First step – Gather all your ingredients!

Top Left – Drain and rinse corn and black eyed peas and add them to a medium sized bowl. 

Top Right – Rinse and half cherry tomatoes and add them in as well. Dice avocado and add to bowl. 

Bottom Left – Chop green onion and cilantro and add to corn mixture. 

Bottom Right – Add remaining ingredients and toss to combine.

Pro Tip: The vinaigrette keeps the avocado from going brown, so this salsa will totally save until the next day. If there is any left that is. Also, if you don’t have an avocado saver you probably need one!

Ingredients

  • 1 Can Corn Drained and Rinsed
  • 1 Can Black Eyed Peas Drained and Rinsed
  • 2/3 Cup Fresh Cilantro Chopped
  • 2/3 Cup Green Onion Chopped
  • 1 1/2 Cups Cherry Tomatoes Halved
  • 3 Avocados Diced
  • 1/4 Cup Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 1 Tbsp Lemon Juice
  • 1/2 Teaspoon Cholula Hot Sauce
  • 1/2 Teaspoon Cumin
  • 1 1/2 Teaspoon Salt
  • 2 Teaspoons Minced Garlic

Instructions

  • Combine all ingredients in a large bowl and toss to combine.
