I am not exaggerating when I say these chicken bites are one of our families' most frequently made recipes. They are super easy to throw together. They are healthy. They are great leftovers. ALL my kids will eat them. Need I say more?
Chicken Bites
Nothing makes me happier than a healthy, well rounded meal my whole family will eat. Let's be honest-- those can feel so rare! Thankfully we have a few that always fit the bill (our buffalo chicken bowls, the best grilled chicken marinade, teriyaki chicken and tortilla soup to name a few). But these baked chicken bites top the list of our family favorites.
They remind me of a copycat Chick-Fil-A grilled nugget, only they are baked not grilled. You could absolutely grill them as well-- but I usually just stick them in the oven because they are so yummy that way and it's more convenient for me.
Baked Chicken Seasoning
Let me show you how simple these really are. When it comes to baked chicken seasoning is key. The simple mix of spices here really is culinary perfection, and you probably already have them all on hand.
Top Left - Using fresh or thawed chicken breasts or tenders, cut your meat into small chunks in a medium sized bowl.
Top Right - Add olive oil, salt, pepper, garlic powder, onion powder, thyme and Italian seasoning to your chicken cubes.
Bottom Left - Mix to combine, and marinate in the fridge for a few hours. If in a time crunch you can skip the fridge step, and they will still be delicious.
Bottom Right - Spread marinated chicken bites out onto a foil covered baking sheet and bake at 450 degrees for 15 minutes, or until almost cooked through. Turn over to broil and broil for 1-2 minutes until golden brown.

Can this recipe be made as Kabobs?
Absolutely. If using wooden skewers just soak them in water for 20 minutes before threading on the chicken to avoid burning. You can also cover exposed ends with foil.
Can you grill the chicken instead of Bake it?
Yes. Whether out on the grill or using a George Foreman these work wonderfully with the grill. They taste similar to the Chick-Fil-A grilled nuggets when cooked that way.
What if you don't have time to marinate?
No worries. I have skipped this step many times and while I prefer to marinate for a few hours, baking immediately still yields delicious results.
Are all the seasonings mandatory?
The seasonings listed in the recipe pair really well together to create a delicious and versatile flavor. That being said, if you are out of one it is not the end of the world and the recipe can be adapted.

- 2 Tablespoons Olive Oil
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- ½ Teaspoon Italian Seasoning
- ½ Teaspoon Thyme
- ½ Teaspoon Sea Salt
- ¼ Teaspoon Pepper
- 2-3 Pounds Chicken Breasts or Tenders Fresh or Thawed
Instructions
- Preheat your oven to 450 Degrees and line a cookie sheet with foil.
- Cut your chicken into small cubes and place in a medium sized bowl.
- Add olive oil, garlic powder, onion powder, thyme, Italian Seasoning, salt and pepper and stir to combine.
- If possible, let marinate in the fridge for a couple hours. When ready to bake spread the chicken bites evenly on top of your foil layer and bake for 13-15 minutes until just about done. Switch oven to broil and broil for 1-2 minutes until chicken cubes are golden brown. Enjoy!
