These chocolate coconut macaroon cookies are quick, easy to make, and so delicious!

Chocolate Coconut Macaroon Cookies
Ingredients
- 2 cups unsweetened coconut flakes
- 2 egg whites
- ½ teaspoon coconut extract
- 1 cup powdered sugar
- 1 cup milk chocolate chips
Instructions
- Preheat oven to 350 degrees. In a medium sized bowl or bosch mixer, add coconut, egg whites and coconut extract and mix until combined. Gradually add in powdered sugar.
- Form your mixture into small balls, I like to use a small cookie scooper, and place them on a parchment paper lined cookie sheet.
- Bake for 12-15 minutes or until golden brown on the outside. While cookies are cooling melt your chocolate. Add melted chocolate into a small zip lock bag and snip off the corner to drizzle over cooled cookies. Enjoy!
