What can I say, food is my first true love ;). Ever since that moment I tried every Zuppa Toscana recipe I could find, and I can confidently say that this recipe from one of my best friends is the BEST one on the internet.

Zuppa Toscana Soup 

If you have never tried Zuppa Toscana before, get excited! It is the perfect blend of filling, flavorful and delicious without making you feel over full afterwards! It is a perfect recipe to serve to guests because it tastes gourmet, makes a lot, and is pretty simple to throw together!

How to Make Zuppa Toscana Soup 

Is it sounding like a winner yet? I hope so! Here are a few step by step photos to help you know you are on the right track!

Top Left: Gather and prepare all your ingredients so you are ready to go. 

Top Right: Place onion, potatoes, chicken broth, water, and garlic in a large pot. Cook until potatoes are tender, about 15- 20 minutes. 

Bottom Left: Cook your sausage and bacon and add them to your pot. Add salt and Pepper to taste. 

Bottom Right: Reduce heat and add cut pieces of kale and heavy cream. Add crushed red pepper if desired. Heat through and enjoy!

Can I freeze Zuppa Toscana Soup?

Yes! If it has been four days and we still have a significant amount of soup left then I will freeze it to use again. Because this soup does have heavy cream I do like to use the frozen soup within 1-2 months but I have never had a problem with texture when reheating this soup. 

What does Zuppa mean?

Ingredients

  • 1 Pound Italian Sausage
  • 2 Large Potatoes Peeled and Cut into Squares
  • 1 Yellow Onion Diced
  • 8-10 Slices Bacon
  • 2 Teaspoons Garlic Minced
  • 2 14 oz. Cans Chicken Broth
  • 4 Cups Water
  • 1 Cup Heavy Cream
  • 2 Bunches Kale
  • 1/2 Teaspoon Crushed Red Pepper Flakes

Instructions

  • Place onion, potatoes, chicken broth, water, and garlic in a large pot. Cook until potatoes are tender, about 15- 20 minutes 
  • Cook your Sausage and Bacon. Cut bacon into bite size peices and add both items into your pot.
  • Add salt and pepper to taste.
  • Reduce heat and add cut pieces of kale and heavy cream. Add crushed red pepper if desired. 
  • Heat through and serve.
