You guys know that typically I am a chocoholic. However, on certain occasions I find myself having an inkling for something sweet that is, gasp, not chocolate. It seems to occur for me more in the fall, and when it does this classic apple cake that my Grandma makes untucks itself from the corners of my mind.
¾ cup oil
2 cups sugar
2 eggs (beaten)
2 tsp. vanilla
2 ¾ cups flour
2 tsp. soda
4 cups thinly sliced apples (sweet apples such as gala work best)
*optional, 1 cup chopped nuts (we usually use walnuts or pecans)
Cream Cheese Frosting:
8 oz cream cheese
1 Tbs. butter
1 lb. (approximately) powdered sugar
8 oz cream cheese
1 Tbs. butter
1 lb. (approximately) powdered sugar
Mix all ingredients together and pour into either a 9x13 cake pan or three loaf pans (I do loaf pans typically because then I can keep one and give the others away to friends). If you do not like getting big chunks of apple (I do, hubby does not) then chop your apple slices to make them more bite sized. Bake at 350* for 50-60 minutes or until fork inserted in center does not come out goopy. Yes, goopy.
