Make Ahead and Freeze Breakfast Wraps are stuffed with sausage, cheese, eggs, and veggies and are the perfect fast and healthy breakfast for busy mornings!

Hi everyone! Amanda here from Old House to New Home sharing the perfect recipe for busy back to school mornings. I know it is still July, but within just a few weeks, we will be packing those backpacks and sending the kids off in the mornings! I am going back to work full time and my daughter is going to kindergarten, so I know we will be rushing around every morning to get out of the door! I don’t want anyone to skip breakfast, so I will be sure to keep a pan of these make ahead and freeze breakfast wraps in the freezer at all times!

Make Ahead Breakfast Wraps

These wraps are so easy and took me less than half an hour to make. They are also super customizable and you can fill with any of your favorite breakfast foods.

Breakfast Wrap Ingredients

  • Scrambled Egg
  • Sharp Cheddar Cheese
  • Red Peppers
  • Purple Onions
  • Turkey Sausage

I recommend using the turkey sausage because it freezes really well and is also less greasy than regular sausage, so your wrap doesn’t get soggy.

How to Make Breakfast Wraps

Place all the ingredients on the left side of the tortilla so they don’t squish out when you roll them. Place the egg on the left of the sausage so the sausage can serve as a barrier.

Fold the edges in and then wrap, to help hold in the ingredients.

Wrap each one in plastic wrap so that they freeze separately in the freezer and you can remove one at a time.

These easy Make Ahead Breakfast Wraps are the perfect food to keep in your freezer to pull out on busy mornings. They are healthy and filling and are perfect for grabbing and going!

Perfect make ahead and freeze breakfast for those busy mornings! This grab and go breakfast is delicious!

Ingredients

  • 12 small flour tortillas
  • 12 turkey sausage links precooked
  • 12 slices sharp cheddar cheese
  • 6 eggs
  • 1 red pepper diced
  • 1/2 red onion diced
  • 1 tsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder

Instructions

  • Scramble the eggs in your desired method. I like to scramble in 1 tsp. butter, slowly over low heat. Add half the salt, pepper, and garlic powder. 
    Brown the sausages. Remove from pan when finished and add 1 tsp. olive oil to the pan. Add the peppers and onions and season with the remaining half of the seasonings.
    Lay out all your ingredients. To each tortilla add 1 slice of cheese, 1 sausage link, 2 tsp. scrambled eggs and 1 tsp. veggie mixture. Fold in the edges and then roll. Secure each wrap with a piece of plastic wrap.
    To freeze, place all the wraps in a baking dish. To prepare, remove from the freezer the night before to defrost. Cook for 45-60 seconds in the microwave to reheat. 

Notes

Store in airtight containers to ensure they last longer!
