Who is hosting visitors this holiday season!? I am, and I LOVE having visitors but I always feel a little stressed when it comes to feeding people three meals a day. What it comes down to is that I just don’t love doing tons of dishes, and when you cook for groups the dishes can get crazy. That’s why I always try to use my slow cooker as much as possible when I have company. It keeps the mess at a minimum and I can let the slow cooker do the work of making meals while I spend time with my guests!
I find overnight crockpot breakfasts to be ideal. The food is basically ready when everyone wakes up!
The week before Thanksgiving we had some visitors so I made some super easy slow cooker breakfast burritos (they cook overnight) and they were really a crowd-pleaser. It was a cheap way to feed a crowd, too. I so highly recommend this! Slow Cooker Breakfast Burrito Recipe

Ingredients
- 2 lbs breakfast sausage
- 10 oz frozen hash browns
- 2.5 cups cheddar cheese shredded
- 1 cup milk
- 12 eggs
- salt to taste
optional:
- 1/2 white onion chopped
- sriracha
- 1 bell pepper
Instructions
Prep:
- Brown breakfast sausage in a frying pan over medium heat. If adding chopped onion, add it in.
- Dice peppers.
- Whisk eggs with milk and salt + pepper to taste.
Slow Cooker Breakfast Burrito Instructions:
- Coat inside of slow cooker with cooking spray.
- Spread hash browns in the bottom.
- Add cooked breakfast sausage, peppers and cheese, stir to mix.
- Pour egg mixture over the top of everything.
- Cook on high for 3 hours or on low for 6-8 hours.
- Serve with warm tortillas, sour cream, fresh pico de gallo, avocado and salsa.

No, I just throw them in frozen!

If you cut the recipe in half, is it the same amount of time?
I’m not sure! You could probably do it for less time, but I’d check it often and just turn off the slow cooker when everything is cooked through!
This turned out well and is relatively inexpensive! I was looking for a simple, economical, yummy breakfast burrito recipe in a crockpot so I could bring it for volunteers at an event — something to keep in the volunteer room for the morning. I’ll have other vegan and gluten-free options at the event too — but I wanted something hearty & warm for those without food restrictions. One practice run at home, and the family gave it a thumbs up. I used 1.5# of sausage rather than the 2#, and that was fine. I’ll be doubling the recipe for the event and providing regular & GF tortillas.
My crockpot is very hot on LOW, so it was done by about 4 hrs (cooked from about 10 pm to 2 am), so I switched it to warm until breakfast time and it was well-received.
This is now my favorite go-to breakfast recipe when I have guests overnight. It’s very quick to put together, everyone loves it, and if there are leftovers, I can freeze the burritos to have later when it’s just my husband and myself again. Double winner!

If frozen, how would you reheat?
I thaw them in the fridge overnight, and pop them in the microwave for a few minutes until they are hot all the way through! You can also thaw them in the microwave while you heat. Either way they are delicious!

Yes, I think you can double this! I’ve never tried it all in one slow cooker. It might get really full, but it should work.
Looks great! CAN you freeze the burritos?
Yeah, you totally can! Just let them fully cool, then wrap them up tight with a couple layers of cling wrap. They should stay good in the freezer for a month or two!
