    Hi Friends! It's Katie from Made to be a Momma here again to share a simple and delicious summer side dish. You only need a few simple ingredients and it's perfect to serve for summer barbecues, birthday parties or you can adjust the ingredients to just make it for yourself too!

    The base of this summer salad are tomatoes and cucumbers. ย One of my favorite ways to eat these seasonal veggies is with a simple drizzle of balsamic vinegar but sometimes we like to spruce it up a little bit. ย We like to add some dill to our creamy salad but you can omit it if it isn't your favorite.

    The creamy sauce is almost just as simple to make as slicing some cucumbers and dicing tomatoes. ย If serving this dish for a party I recommend making the sauce ahead of time but only adding it to the veggies about 30 minutes before serving. ย This will help keep the veggies from getting mushy.

    Creamy Tomato & Cucumber Salad

    Ingredients

    • 1 cup cucumbers, diced
    • 1 cup tomato, diced

    FOR THE SAUCE:

    • ยผ cup Mayo
    • 1 tablespoon vinegar, white
    • 1 ยฝ tsp. sugar
    • ยฝ teaspoon dill
    • ยฝ tsp onion powder
    • salt & pepper, to taste

    Instructions

    • Place diced cucumbers and tomatoes in a medium size serving bowl.  In a small bowl whisk together sauce ingredients until mixed throughly.  Pour over cucumbers and tomatoes.  Serve immediately or refrigerate until ready to use.

      Have made this many times for family and pot lucks. Always a hit. Usually have to quadruple the recepie.

      I have made this a few times.. I love it. Made it for a pot luck at work and was a hit. I have found that the dressing tends to get a little thin. I drain it off into another dish and save it to add later if needed.

      I just made this recipe, and followed the directions to a tee. Exact measurements etc.
      My salad Is super watery... what did I do wrong?

        Ugh Brandi I'm so sorry, that is so frustrating! I typically chop my tomatoes on a cutting board and then move them to a bowl so their excess juices don't get in the salad, maybe you had really juicy tomatoes? Another option could be to add half the dressing and toss, if your tomatoes or cucumbers weren't as big as the ones we used that could factor in as well. Hope this helps- xo
