About a month ago I decided it was finally time to crack down on all my “baby weight” which is really a combination of actual baby weight and all the extra ice cream I ate while I was pregnant and couldn’t work out (due to my first pre-term labor). Anyway, things have been going really well, (once I’ve lost it all I’ll write a post detailing how I did it). I’ve been working hard on changing the way I eat and it’s been a blessing. The hard part for me about eating healthy is that things around here start to get really repetitive. I don’t mind simple, clean eating, but sometimes switching it up does wonders for the spirit and the weight-loss mindset! So, I was sick of salads, fish, chicken and veggies and I set out to find a bunch of yummy dinners under 500 calories. I am drooling over these.. and so pleased with the variety I found. Here’s hoping that I’m not the only one wanting to lose a few pounds and some of you might appreciate these as well!
