Elote: Mexican Grilled Corn

Have you guys ever had Elote? It’s that Mexican street corn you might have seen around. Let me tell you something. After you try this you will never want to eat corn on the cob any other way. That is a promise! It’s a total party in your mouth. Remember in the movie Nacho Libre when Eskeletor is always getting it? I wanted to try it after that, just for kicks but I didn’t think I was going to like it. Ever since I’ve been obsessed. It’s awesome for BBQ’s or just weeknights at home. You can even do this with your George Foreman.

Ingredients:

4 Ears of Corn, still in husks but silk removed
1/4 Cup Melted Butter
1/4 Cup Mayo
Juice of 1/2 Lime
Crumbly Cotija Cheese (Queso Fresca works too!)
Chile Powder
Lime Wedges
Skewers (optional)
 
Directions:
Grill corn in husks about 15-20 minutes, turning at least once during cooking time. While corn is grilling, mix melted butter, mayonaise and lime juice until well blended. Remove corn from grill, remove or pull back husks and spread mayo mixture onto corn. Sprinkle with chile powder and cheese to taste before serving with lime wedges.To add a little more kick, mix chile powder with cayenne pepper (to taste) before sprinkling.

If you haven’t seen Nacho Libre, I hereby recommend it to you. It’s stupid, and so awesome. This is the best quote from the whole movie!

    LOL. I’m so glad you posted that Nacho Libre quote because as soon as I saw that corn, that’s what I was thinking about lol! :) This corn looks amazing! I love corn; especially fresh summer corn! Nom nom nom!

    Ha, such a stupid movie. Love it. I also love this corn. I like making Esquites better, on account of it being less sloppy to eat, but it’s just not as Summer-y.
