If you like piña coladas, and getting caught in the rain (sorry.. I couldn’t resist) you are going to love this recipe! It is a healthy, virgin, low calorie version of pina colada dreaminess! My sister knew I had been having sugar withdrawals lately and so she sent me this recipe to help me curve the cravings.. and it worked! I’ve since made these skinny piña colada slushes numerous times! When my kids are running around like hooligans and my house is a disaster and I have six loads of clean laundry sitting on my bed waiting to be folded, I make myself one of these babies and close my eyes and pretend I’m at the beach! It sometimes works for like 5 whole seconds before someone starts screaming, haha.
Honestly, sometimes I drink this without adding the flavor drops at all and it is still totally cool and refreshing, so if you are opposed to sugar substitutes just leave out the drops, you could even add a little shot of pineapple juice instead! I have also made this with regular milk instead of coconut and it is super yummy that way, too!
