This fluffy and delicious lemon brown rice is so good you will forget it's actually healthy!
I love a good fluffy, flavorful rice. When it's good, its GOOD. Right?! So I'm super excited to share this lemon brown rice recipe today, because it's EASY, comes together really fast, and it's good for you. The perfect thing to accompany a delicious dinner!
The lemon and garlic flavors add so much to the brown rice, that it doesn't taste like brown rice anymore. Which, for me is a plus. I don't hate brown rice. I just, you know, prefer white rice. What can I say?! It also just looks really pretty with some lemon slices in it. If I don't say so myself...
Easy Lemon Brown Rice
Ingredients
- 3 cups brown rice that's 3 cups when cooked!
- 2 fresh lemons
- 2 cloves minced garlic
- salt
Instructions
- Cook brown rice according to package directions. I usually use brown minute rice.
- Squeeze lemon juice into rice and stir in, with minced garlic.
- Salt to taste and enjoy!

It's almost *too* easy! This rice goes perfectly with chicken, salmon, honestly - tons of dishes! I have a really awesome greek chicken bowl recipe that is coming very soon that this is a part of. That one is worth the wait, trust me!
I usually use minute brown rice, I love a good shortcut, but you can use any brown rice. Just make sure to cook it according to the package, then add the delicious stuff and let the flavors meld for a few minutes before serving!
