Fresh Corn Salsa

I was at home this last week and our oldest family friends were staying there too. Somehow the blog came up and my friend Kelsey said, “oh I have a recipe you have to share, people will love it!” So we went to the store and bought the ingredients. We made a double batch. It evaporated. Seriously, it was that good. I have had similar type salsa’s before, but none hold a candle. I’m not sure what it is that makes this one so delicious (maybe the red wine vinegar?) but wow. You have to try it.

Bonus! It is ultra easy. All you do is combine these ingredients in a very large bowl and toss.

1 can shoe-peg corn
1 can black eyed peas
2/3 cup fresh cilantro
2/3 cup green onion
3 medium tomatoes-diced
3 avocados-chunked
1/4 cup olive oil
1/4 cup red wine vinegar
1 Tbsp lemon juice
1/2 t Cholula hot sauce
1/2 t cumin
1 1/2 t salt
2 cloves fresh diced garlic

Don’t forget to make sure you have plenty of tortilla chips on hand! I promise you this salsa won’t last long….

    Hey there! this recipe looks super awesome. I am hoping to make it for a gathering tomorrow. Do you think it would be ok to make ahead of time or would the avocado get mushy?

      If you do make it earlier then definitely don’t add the avocados yet! I would wait as long as you could before adding them! It is so delicious, I hope you love it as much as we do!!
