Lemon Sugar Cookies

Friends...it's Katie from Made to be a Momma again!  I am more than ready for spring and summer weather!  I live in Northeastern Pennsylvania and blizzard "Stella" dumped 27 inches of snow on us just a few weeks ago.  Nothing reminds me more of sunshine filled days than a delicious lemon flavor filled cookie.  These lemon sugar cookies aren't overly sweet so it's easy to eat a couple at one time.  The dough has lemon in it but I also rolled the cookies in a delicious lemon zest sugar mixture that gives these cookies an extra punch of lemon right as you bite into them.

These lemon sugar cookies are delicious and great for Easter parties, Mothers Day and just because you want something sweet :)

These sugar cookies are to die for good! Plus, they are so easy to make!

Ingredients

• 2 ¾ cup Flour
• 1 tsp. baking soda
• ½ tsp. baking powder
• ½ tsp. salt
• Zest of 2 large lemons separated
• 1 ½ sugar
• 1 cup butter
• 1 egg
• ½ tsp. vanilla extract
• 4 TBSP. lemon juice
• ⅓ cup sugar for rolling

Instructions

• In a small bowl, whisk together flour, baking soda, baking powder and salt.
  

  Using a stand or handheld mixer, beat together butter and sugar until smooth and creamy.

  Add half lemon zest, egg, vanilla extract, and lemon juice. Mix until combined. Add to dry ingredients and mix. 

  Mix remaining lemon zest and sugar in a small bowl. Roll rounded tablespoons of dough into balls and roll into the lemon sugar mixture. Place on prepared baking sheets.

  Bake 8 to 10 minutes at 350 degrees or until cookies are slightly brown around the edges and set.
