We already have warm weather here that makes me want to dive into a pool. With the warm weather, I do not want to spend my days with an oven adding extra heat to the house. No-bake desserts are the best thing for this time of year! Treats without heat. There's a catchphrase for you. I've made these with Rice Krispie cereal but this Chex Scotcheroo recipe is just another tasty way to make them.

Scotcheroo Recipe ingredients
- Chex cereal
- light corn syrup
- sugar
- semi-sweet chocolate chips
- butterscotch chips
- creamy peanut butter
- vanilla

How to make Scotcheroos
- Butter a large bowl and measure out 6 cups of Chex cereal. Set aside. Butter a 9x13 dish and set aside.
- Stir the corn syrup and sugar in a saucepan over medium heat.
- Once the mixture is boiling, immediately remove it from the heat. Stir in 1½ cups of peanut butter, creamy or crunchy.
- Pour peanut butter mixture over cereal and stir together until cereal is completely coated.
- Pour cereal into the 9x13 dish and press with clean hands to even it out. It's easier than using a spatula or wooden spoon.
- Using a microwave-safe dish, melt together chocolate chips, butterscotch chips, ½ cup of creamy peanut butter, and vanilla. If microwaving, heat in 30-second intervals, stirring in between to prevent the chocolate from burning.
6. Once smooth, spread over the cereal.
7. Allow bars to cool completely at room temperature or place them in the fridge.
8. Cut scotcheroo bars into squares and enjoy.

- I like to keep these Chex scotcheroos in the fridge during the summer so the chocolate doesn't melt.
How to store Scotcheroo Bars
- Cool Completely: Allow the Scotcheroos to cool completely at room temperature before storing.
- Cut into Bars: Cut the Scotcheroos into bars after they are set, but still soft. (15-30 minutes after making them.) This will make it easier to serve later.
- Keep in an Airtight Container: Place the bars in a single layer in an airtight container. You can use parchment paper or wax paper to separate layers if necessary.
- Store at Room Temperature: You can store Scotcheroo bars at room temperature for a few days, but they are best when fresh. They will start to harden over time.
- Freezing: For long-term storage, you can freeze Scotcheroo bars. Wrap them individually in plastic wrap and then place them in an airtight container or a freezer bag. Scotcheroo bars can be stored in the freezer for up to 3 months. To thaw, simply leave them at room temperature for a few hours.

The number of cups of Chexin a box can vary. A typical box of Chex has about 7-8 cups of cereal. Be sure to check the packaging of the cereal you are using for the most accurate measurement.
