Bacon-Wrapped Potatoes with Dill Sauce

Oh. my. GOSH. These bacon-wrapped potatoes are amazing! prettyprovidence.comThese baconwrapped potatoes literally taste like heaven. There is no other way to describe them. After the first time I tried them I was making them at least once a week for a while! They are truly that good and potatoes are one of the most inexpensive foods out there, so it’s great for my wallet too.

These bacon-wrapped potatoes taste like HEAVEN.
Bacon-Wrapped Potatoes with Dill Sauce
  • Red Potatoes
  • Bacon Sliced in Half
  • Salt
Dill Sauce:
  • 3/4 Cup Mayo
  • 1/4 Cup Buttermilk
  • 2 Teaspoons Dried Dill
  • 1 Teaspoon Caraway Seeds
  • Salt & Pepper
  1. Whisk together the mayonnaise, buttermilk, dill, caraway seeds, and ¼ teaspoon each salt and pepper. Let chill in the fridge for at least 30 minutes to let the flavors really come together.
  2. Preheat your oven to 400 degrees.
  3. Peel potatoes.
  4. Halve or quarter bigger potatoes. You can leave the small ones whole.
  5. Boil 1 quart of water with salt. Add potatoes and turn heat to low, let simmer for 12 minutes. Drain.
  6. Put potatoes on a greased baking sheet, sprinkle some salt on top of them.
  7. Wrap each potato with half a piece of bacon, with the two ends meeting underneath the potato.
  8. Bake potatoes for about 25 minutes, until bacon is crispy!
This recipe is simple and it is the perfect side dish to go along with a slow-cooker roast, chicken, or you could just enjoy them by themselves.

I am thinking of serving these babies at Thanksgiving this year. I think it would complement the turkey dinner quite nicely!
