The weather has finally turned chilly where I live which makes this easy slow cooker chicken tortilla soup a regular on our dinner rotation! I love it because not only is it warm and hearty, but it is healthy too! Nothing better than comfort food that's high in protein low in calories am I right?!
Slow Cooker Chicken Tortilla Soup
Whenever I meal prep I love to use this recipe because the macros on it are so good. I will make it for dinner and immediately put the leftovers into these lunch prep containers for my husband and I to eat the rest of the week!

Easy Chicken Tortilla Soup
The best thing about this slow cooker chicken tortilla soup is how easy it is to make! Let's get down to the details shall we?
Top Left - Add all your ingredients besides chicken and toppings into your slow cooker and stir until combined.
Top Right - Add chicken breasts to soup (they can be fresh or frozen, frozen will just take longer to cook).
Bottom Left - Once chicken is cooked through (2-3 hours on high or 5-6 hours on low) shred it using two forks.
Bottom Right - Garnish with toppings of your choice and enjoy!
Pro Tips:
- Soup can be made ahead and frozen in an air tight container.
- Great for meal prepping lunches.

Easy Chicken Tortilla Soup
Equipment
- Slow Cooker
Ingredients
- 3 Chicken Breasts
- 2 15 oz Cans Whole Peeled Tomatoes Blended
- 1 Medium Onion Chopped
- 1 4 oz Can Chopped Green Chilies
- 2 Cloves Garlic Minced
- 2 Cups Water
- 1 14.5 oz Can Chicken Broth
- 1 Teaspoon Cumin
- 1 Teaspoon Chili Powder
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
- 1 Bay Leaf
- 1 14.5 oz Can Corn Drained
- Chopped Cilantro For Garnish
- Shredded Cheese For Garnish
- Tortilla Strips For Garnish
- Fresh Lime For Garnish
- Avocado For Garnish
Instructions
- Blend tomatoes until smooth and add to slow cooker. Add in onion, green chilies, garlic, water, chicken broth, corn and seasonings and stir well.
- Add chicken (can use fresh or frozen) into soup broth. Cover, and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, use two forks to shred into bite sized peices.
- Add soup to bowls and garnish with desired toppings. Enjoy!
