    This sausage egg casserole is so easy to make and pleases any crowd. Filled with sausage, eggs, cheese, and veggies, you will want to make this recipe again and again.

    Mmmmm, breakfast food. Literally, I could eat breakfast three meals a day. I know I've mentioned this, but we have breakfast for dinner at least once a week! The awesome thing about breakfast foods (aside from the deliciousness factor) is that they are so affordable and generally quick to throw together.

    World's Best Sausage Egg Casserole

    This sausage and egg casserole recipe is not just delicious, it’s foolproof. All you have to do is mix up the ingredients, bake, and enjoy. It's one of the most popular recipes on our site, and for good reason!

    I will share all of the instructions for how to make this, step-by-step, and answer frequently asked questions to ensure you know everything you need to know to make the perfect sausage egg casserole!

    Egg and Sausage Casserole Ingredients

    • Eggs
    • Sausage (we like Jimmy Dean breakfast sausage for this casserole)
    • Red and Green Bell Peppers
    • Onion
    • Mushrooms (optional)
    • Cheese
    • Sour Cream (light)
    As you are chopping these ingredients, you might think "wow, this is a lot of sausage" "wow, this is a lot of onion" or "wow, this is a lot of mushrooms." The answer is, yes. There is a lot of STUFF in this casserole. I love that about it. It doesn't taste "eggy" it tastes delicious.

    How to make Sausage Egg and Cheese Casserole

    Preheat your oven to 350 degrees F and prepare a 9x13 baking dish with cooking spray.

    1. Brown sausage. Let it cool and drain on paper towels while you prep the other ingredients.
    2. Finely chop veggies and set aside.
    3. Mix eggs, sour cream and cheese together in a large bowl.
    4. Add veggies and sausage to the egg mixture and mix them all together.

    5. Pour mixture into the prepared baking dish and

    6. Bake at 350 degrees F for 45 minutes (or until the casserole is cooked through) and the top is slightly browned on the edges. There should not be any jiggling in the middle!

    Can I make Sausage and Egg Breakfast Casserole ahead of time?

    Absolutely! In fact, most of the time when I make this recipe I prepare it the night before, and then stick it in the fridge overnight. We pop it into the oven first thing in the morning. If the pan is be cold instead of room temperature, you may have to extend baking time for 5-10 minutes.

    Sausage Egg Cheese Casserole Pro Tips

    Since there are so many veggies, we like to use a food processor to chop everything! Sometimes we even cheat and buy the pre-chopped onion and bell peppers at the grocery store. It save a lot of time in a pinch!!

    Serve the casserole warm. It can be a standalone dish, or you can accompany it with other breakfast foods and fresh fruit.

    It will stay good for 5-6 days in the fridge.

    Can you freeze Egg Casserole without Bread?

    Breakfast casserole can be frozen for up to two months after baking. Cover very tightly with plastic wrap and foil before storing your casserole in the freezer.

    Why is my breakfast casserole soggy?

    A few reasons your breakfast casserole might be soggy:
    Extra Liquid: Ensure you drain the sausage before adding it to mixture with other ingredients. 
    Egg Ratio: Make sure you have added the right number of eggs.

    What's the difference between a frittata and an egg casserole?

    Frittata: Cooked on the stovetop and finished in the oven, a frittata is like an open-faced omelet. It's usually cooked in a skillet and doesn't involve layering ingredients like a casserole.
    Egg Casserole: A casserole typically has the ingredients mixed or layered in a baking dish and is baked in the oven.

    When baking a casserole is it covered or uncovered?

    Whether to bake this sausage and egg casserole covered or uncovered depends on your preferences.
    Uncovered: Allows the top to brown and get a little bit crisp. If the top browns too quickly, cover it with foil until the casserole is cooked through.
    Covered: Helps retain moisture and prevents excessive browning. Remove the cover toward the end to allow browning if needed.

    Ingredients

    • 24 oz pre-cooked sausage
    • 10 eggs
    • 1 cup sour cream I use light
    • 1 onion
    • 1 green pepper
    • 1 red pepper
    • 8 oz mushrooms optional
    • 2 cups grated cheese

    Instructions

    • Preheat oven to 350 degrees and prepare a 9x13 baking dish with cooking spray.
    • Chop sausage, onion, peppers and mushrooms.
    • In a separate bowl mix eggs, sour cream and cheese.
    • Once egg mixture is thoroughly mixed, add sausage and veggies. Pour into your prepared dish.
    • Bake for 45 minutes or until cooked through.

    Notes

    Make ahead: Assemble the casserole the night before but don't bake it. Cover with plastic wrap, refrigerate, and pop it into the oven the next morning.

      Hi...just came across your recipe on Pinterest and plan to try it this weekend. When you say "precooked" sausage what are you referring to...like Eckrich or Hillshire Farms smoked sausage? I was thinking of using breakfast roll pork sausage as in most breakfast casseroles I have made (though that is not precooked).

        I just meant if it's not pre cooked, you should cook it BEFORE you add it to the casserole! So any kind should work just fine!

        You can cook a lb. of sausage in the mircrowave . Break up sausage in microwave pan, cook 3 minutes, take out, drain grease, break up sausage some more, put back in micro for 21/2 more minutes or until cooked. Easy and I do all of my recipes that call for hamburger or sausage this way.

      OMG This was soooo goood! I halved the recipe to make myself breakfast for a week. Replaced the mushrooms with grated zucchini and added paprika and oregano. I used jerk sausage so it was a little bit spicy but...very awesome. I don't think its gonna last the week...

      Just made this and it is delicious. I used a pkg of Hillshire Farms turkey kielbasa, diced, for the sausage and added a tsp of salt to the egg mixture. Other than that I followed the recipe exactly. Baked longer than it called for but I expected that. Probably just over an hour. I don't think the kids would love it cause it's really dense with veggies but I was looking for a low carb, high protein and high veggie breakfast for myself that I can heat up throughout the week and this fit the bill. Hopefully I enjoy it as much reheated!

      Can this be made the night before? I would like to prepare and or cook for the hubby when he goes to deer camp . He could cook it or just warm it up before they head out in the morning.

        We reheat our leftovers and eat them the next day! It's not quite as good as right out of the oven (like most leftovers) but still really yummy!

      I am hoping to make this to bring to a party tomorrow morning. How many servings would you say it has? And has anyone ever cooked it the night before and heated it up in the morning?

        The servings would depend on whether you were serving only this dish or there would be other sides as well. I usually cut it into 12 squares!

        Yes you can! I just add as many as will fit in my pan. Sometimes (depending on the hash brown) you will need to cook your mixture a little longer, just test to see!

        I'm not sure! I have never tried freezing it before, in sure you could find some tips online! Sometimes I do half the recipe though and just bake it in a smaller pan!

      This definitely does look like the world's best. I've done similar casseroles.. they're always good.. but I've never added sour cream. I bet that makes it extra awesome.
