Halloween Eyeball Cake Bites are a delicious and spooky Halloween treat. Made with vanilla cake and homemade cream cheese frosting, everyone loves them.

Hey friends! Have you made any cute Halloween treats this year?! Frankenstein Rice Krispies, Candy Corn Jello Cups and Mummy Brownies are some of our very favorites.

But, have you ever had cake balls? Cake bites. Cake pops without a stick. Whatever they're called, they are so dang good.

Cake Balls are made by mixing cake with frosting, rolling it into balls and dipping it into melted candy coating.

You can decorate them in so many different ways too. So, what better for Halloween than some delicious eyeballs on a platter?

Quick note before we begin: these take a few hours to make just because of the baking, assembling, freezing, then cooling time.

How to Make Eyeball Cake Bites

Ingredients:

Cake
Vanilla Cake Mix
Eggs
Oil
Water
Green Food Coloring (optional)

Frosting
Cream Cheese
Butter
Powdered Sugar

For Decorating
White Candy Melts
Green Icing
Candy Eyeballs
Red Candy Decorating Pen (optional)

Instructions:

Prepare cake mix according to the directions on the box.

How to Make Cream Cheese Frosting:

How to make cream cheese frosting, collage. Step 1 cream cheese and butter, step 2 beat, step 3, add powdered sugar and mix. Step 4, add food coloring.

Add softened cream cheese and butter into a large mixing bowl. Beat with a hand mixer for 2 minutes. (Photos 1 and 2)

Add powdered sugar and vanilla, mix with the hand mixer until smooth.  (Photo 3)

Add green food coloring (optional) and mix well. (Photo 4)

How to Make Cake Balls:

Crumble your entire cake up. I know... it seems sad at first but it will be so much better!

Combine cake with the frosting until it's mixed well.

Pro Tip:

I find it's easiest to use my hands to mix the cake and frosting. Wash hands and remove jewelry before doing this. 

Refrigerate for 15-20 minutes. Prepare cookie sheets with parchment paper.

Roll chilled cake and frosting mixture into 2-inch balls and put them on the prepared cookie sheet. Put cake balls into the freezer for an hour.

How to Decorate Eyeball Cake Bites

Pull cake balls out of the freezer and get out your decorating supplies.

Melt the white candy according to package directions. Make sure it is completely melted and stirs easily.

Tips for Melting Candy:

Be sure to follow the directions exactly, candy melts can be finicky and every brand is different.

If you want to thin the candy coating a little bit, use pure vegetable shortening. Do not use water, milk, oil, or any other liquid.

Dip each cake ball into the melted candy coating and cover it. Carefully place it on the cookie sheet and use your thumb or finger to make a little divot in the top.

Once you've dipped all of the cake balls, add a circle of green icing to the divot, and then top each one with a candy eyeball.

After eyeball cake bites are room temperature, you can use a red candy decorating pen to add veins. This is optional but makes them totally creepy!

Here is a picture of when I did this a few years ago using the red candy pen. Instead of icing, I used large green, blue and purple sprinkles under the candy eyeballs.
