My family is basically obsessed with breakfast foods. We eat them breakfast, lunch and dinner, and sort of consider ourselves connoisseurs. Now, let me say, these are the BEST YEAST WAFFLES EVER. They have amazing flavor, nice and crisp on the outside with a light and fluffy interior. I can assure you these overnight waffles are hard to beat!
Although the batter sits overnight, they are just as easy to throw together as normal waffles, and in the morning you will be so grateful you took the time the night before!

Yeast Waffles
Yeast waffles, also known as Belgian Waffles or overnight waffles, are basically waffles where the batter is made in advance and uses yeast. This combination produces deeper grid patterns and a lighter, fluffier batter! The contrast and flavor take these waffles over the top.
I can assure you once you've made this recipe it will be your new go-to waffle. Our kids request them for their birthday breakfasts and basically any special occasion!
Overnight Waffles
Some people are intimidated by the term "overnight waffles;" don't be! All this means is that the batter needs time to settle. Why? So that the waffles are nice and fluffy! Rather than being stressful, it actually makes these waffles quicker to throw together in the morning!
You can throw them together in five minutes at night after the kids have gone to bed, so then in the morning we are ready to roll.
Overnight Waffle Batter Ingredients
- Instant Yeast
- All Purpose Flour
- Sugar
- Salt
- Milk
- Melted Butter
- Vanilla
- Eggs
- Vegetable Oil or Cooking Spray

How to make Overnight Yeast Waffles
Here are the simple steps for making the waffle batter, this is the part you will complete the night before!
1. Top Left - Combine all your dry ingredients in a bowl.
2. Top Right - Add in milk, butter and vanilla.
3. Bottom Left - Stir to combine.
4. Bottom Right - Cover bowl with plastic wrap and leave out overnight.
Here is what the next morning will look like!
5. Top Left - Separate your eggs and stir the yolks into the batter. Beat your egg whites until they hold soft peaks and then fold them into the batter. Beating the egg whites ensures a fluffier texture.
6. Top Right - Heat your waffle iron and spray with cooking spray (do this between each waffle). Add batter to waffle iron; ours uses about ⅓ cup per waffle. This may vary depending on the size of your waffle iron.
7. Bottom Left - Cook your waffle.
8. Bottom Right - Your waffle is done when it is golden brown in color and no longer doughy.

- ½ teaspoon instant yeast
- 2 cups all purpose flour
- 1 tablespoon sugar
- ½ teaspoon salt
- 2 cups milk
- 8 tablespoons melted butter

You should really fix your recipe so when people make this and don't read all the comments they see you let it sit in the fridge overnight not at room temperature like the recipe says.

Hey Erin! The recipe actually calls for the waffles to sit out at room temperature! We do that almost every time we make them and have never had an issue with the milk or anything else! If you are worried about leaving them out at room temperature though, we have also tried it with them overnight in the fridge and they still work great! So at the end of the day it really doesn't matter whether you leave them on the counter or on the fridge, they may not be as fluffy if left in the fridge but they still look normal and taste great. Sorry for the confusion!

I meant to have that say you *can* let them sit in the fridge! But we leave ours out on the counter and have never had any issues! But they work great if left in the fridge as well!

Is there an error in the recipe? I've attempted these twice now and they turn out nothing like the photo. In the morning the batter is foamy on top and runny "whey" like underneath. After adding eggs and egg whites it is still too runny. This morning I drained off some of the "whey" and added flour...that helped some, I at least got a normal looking waffle.
I'm thinking the recipe must have an error in the ratios. Perhaps the milk should be 1 or 1 1/2 instead of 2 cups?
