Spinach Banana Muffins
I am always looking to streamline my mornings because I get legitimately scary if I don't eat breakfast, but mornings are busy! So... my latest go-to is muffins. I keep them in the freezer and pull a couple out each morning as needed. These green muffins are packed full of healthy ingredients - spinach, banana, applesauce, whole wheat flour and and even my toddler will eat them because we call them "monster muffins!" Somehow anything with a name like that is automatically accepted. (Except broccoli. Monster broccoli hasn't worked yet.)
These are a fun, healthy green food idea for St. Patrick's Day or Christmas too. I love when being festive is so easy. I topped the muffins with a simple glaze, but that is totally optional. If you're eating clean, these muffins sans-glaze totally fit the bill!
But if you are into glaze... I recommend it. A little bit goes a long way!

Spinach Banana Muffins
Ingredients
Dry Ingredients
- 2 cups flour whole wheat
- 1 ½ teaspoon cinnamon
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Wet Ingredients
- 1 large banana
- 2-3 cups spinach
- ½ cup applesauce
- 1 egg
- ¾ cup milk or almond milk
- 1 teaspoon vanilla
- ¼ cup honey
- green food coloring optional
Glaze
- 1-2 cups powdered sugar
- ¼ cup milk
Instructions
- Preheat oven to 350 degrees. Prepare a muffin pan with cooking spray and cupcake liners, if using.
- Mix dry ingredients in a large bowl.
- Add wet ingredients to a blender. Puree until very smooth.
- Mix wet ingredients in with dry ingredients until there are no lumps. Add green food coloring if you want a darker green color.
- Spoon batter into the muffin pan. Bake for 20 minutes or until a toothpick comes out clean.
- While muffins are cooling, mix 1 cup powdered sugar with ¼ cup milk. Whisk until smooth. Add more powdered sugar as needed until it's the right thickness and consistency for a glaze.
- Drizzle cooled muffins with glaze.

Cute idea! Can I use frozen spinach ?

I have not used frozen spinach and I think it could work but frozen spinach tends to have a lot more liquid, so it would need to be thawed and the water thoroughly squeezed out.
