Cool and refreshing watermelon feta salad with cucumber and fresh mint is the perfect summer side dish! Plus, it's ready in 10 minutes!

About a month ago I started seeing ripe Watermelons in the stores, and I can't get enough! I've been enjoying it plain, as well as making all kinds of things like a Fresh Watermelon Cake and this insanely refreshing Watermelon Slush. This salad recipe though, is the real MVP lately. It's healthy, it is a great side dish for summer, and it only takes about 10 minutes to make!

Watermelon Feta Salad

Watermelon feta salad ingredients: watermelon, cucumber, fresh mint leaves, honey, salt, olive oil, and a lime.

Ingredients:

  • Watermelon
  • Cucumber
  • Mint
  • Feta Cheese
  • Olive Oil
  • Lime
  • Salt
  • Honey

I have used both mini cucumbers and garden cucumbers in this recipe. Both have worked great! 

Another thing I love about this is that you really don't have to measure when you're making this. You can throw as much of each ingredient as YOU want into the salad and it will come out great. Of course, you can measure your ingredients, and I will definitely give you measurements for how much to use if you want to. Just know that it isn't rigid, and can be done to taste as well.

How to Make Watermelon Feta Mint Salad:

  • Cut watermelon into bite-sized pieces. 
  • Slice cucumber and quarter the slices. 
  • Chop fresh mint. 
  • Combine watermelon, cucumber, and mint in a bowl.

Make Salad Dressing:

  1. Pour olive oil into a small bowl.
  2. Add honey. 
  3. Measure salt and add.
  4. Squeeze the juice of one lime into the bowl. 

Whisk together until combined. 

Next, pour the dressing over salad and mix. Top the salad with feta cheese.

Tips for Serving Watermelon Cucumber Salad: 

Can you make this salad ahead of time? 

This salad is best served immediately after dressing it.

Directions to prepare the salad ahead of time:

In one bowl combine the watermelon, cucumber, and mint. Chill until ready to serve. 

Then, in another bowl, make the dressing and cover. 

Just before serving, put the dressing onto the watermelon salad. Mix, and top with feta cheese.

  • Pour dressing over salad, and mix until just combined.
  • Top with crumbly feta cheese.
