The awesome thing about breakfast foods (aside from the deliciousness factor) is that they are so affordable and generally quick to throw together.

  • Red and Green Bell Peppers
  • Onion

As you are chopping these ingredients, you might think "wow, this is a lot of sausage" "wow, this is a lot of onion" or "wow, this is a lot of mushrooms." The answer is, yes. There is a lot of STUFF in this casserole. I love that about it. It doesn't taste "eggy" it tastes delicious.

How to make Sausage Egg and Cheese Casserole

Preheat your oven to 350 degrees F and prepare a 9x13 baking dish with cooking spray.

  1. Brown sausage. Let it cool and drain on paper towels while you prep the other ingredients.
  2. Finely chop veggies and set aside.
  3. Mix eggs, sour cream and cheese together in a large bowl.
  4. Add veggies and sausage to the egg mixture and mix them all together.

6. Bake at 350 degrees F for 45 minutes (or until the casserole is cooked through) and the top is slightly browned on the edges. There should not be any jiggling in the middle!

Can I make Sausage and Egg Breakfast Casserole ahead of time?

Absolutely! In fact, most of the time when I make this recipe I prepare it the night before, and then stick it in the fridge overnight. We pop it into the oven first thing in the morning. If the pan is be cold instead of room temperature, you may have to extend baking time for 5-10 minutes.

Since there are so many veggies, we like to use a food processor to chop everything! Sometimes we even cheat and buy the pre-chopped onion and bell peppers at the grocery store. It save a lot of time in a pinch!!

    I have made this recipe for many years! The whole family loves it! Both of my kids have asked for the recipe to feed their families! It's great for a large holiday gathering or great for a lazy comfort food sunday or best yet, we love it for dinner!

    Looking for a nutritious, gluten free, protein rich, easy breakfast dish to serve my teen grandchildren while being the adult supervision while parents are on a trip, I found the Pretty Providence website and "The World's Best Breakfast Casserole" recipe. I made it last night, just as written (except for leaving out mushrooms which they don't like.) I cut the bell peppers in strips, the onions in chunks and each type individually in my mini food processor to mince. Then I measured each type of vegetable. I decided to use only 1/3 cup of each due to my own particular tastes. I used regular sour cream. I used sharp cheddar cheese. I used Bob Evans original sausage as it has been my favorite for as long as I can remember. Bob Evans started in Ohio, I mean the real Bob Evans and family, not the now known corporately owned company. The sausage has been the same since I can remember eating it back in the 1950's. Very consistent, very good. I baked it in a glass 9 x 13 dish. Checking on it, I found it was done in about 37 minutes in my oven (at 350 degrees.) I let it cool, cut it into squares and then this morning warmed it up for their breakfast. They loved it! They're off to school now and I'm back at my home and getting ready to serve it to my wonderful husband of nearly 53 years! Try this one, it's a keeper. My granddaughter reminded me of the trick of baking the egg dish in prepared muffin tins. I may do that the next time. I'll have to watch it though as I'd have no idea how to calculate the baking time! Ladies, thank you for this wonderful recipe. It is the world's best breakfast casserole as far as I'm concerned. Easy and delicious!
