Get excited guys because today I am sharing one of my favorite recipes of all time! Not only is this lasagna soup absolutely delicious and filling, but it's macro friendly as well, (depending on how much of the cheesy goodness you decide to heap into your bowl).

We love this recipe year round, but especially in those cool crisp fall and winter evenings. It's especially delicious with our easy Rustic French Bread.

Easy Lasagna Soup Recipe

My bestie Cassidy first introduced me to this soup at a baby shower and it was a smash hit! Seriously, people could not get enough, myself included. Since then we have made it dozens of times and each time it tastes as good as the last.

Due to the size of the batch, it's a great choice when you are having company over, bringing something to a party, or bringing someone dinner. I promise it will always be well received.

Lasagna Soup with Cottage Cheese Ingredients

For the Soup

  • Olive Oil
  • Hamburger
  • Chopped Onion
  • Minced Garlic
  • Dried Oregano
  • Crushed Red Pepper Flakes
  • Tomato Paste
  • Fire Roasted Diced Tomatoes
  • Chicken Stock
  • Rotini Pasta
  • Bay Leaves
  • Fresh Basil

For the Cheese Mixture

  • Cottage Cheese
  • Parmesan Cheese
  • Salt
  • Pepper
  • Shredded Mozzarella Cheese

How to Make Lasagna Soup with Cottage Cheese

It may seem like a lot of ingredients to add, but you can get the whole thing prepped in 15 minutes, then all you have to do is let things simmer! Here's the step by step breakdown.

  1. Top Left - Heat oil over medium heat. Add hamburger and cook until just browned, then add onions and cook until soft.
  2. Top Right - Add in spices and tomato paste and stir until well combined. Cook for 3-4 minutes until the paste turns brownish in color.
  3. Bottom Left - Add in tomatoes, chicken stock and bay leaves and mix to combine.
  4. Bottom Right - Bring soup to a boil, then reduce heat to low and let simmer for 30 minutes.

5. Top Left - Finished soup base.

6. Top Right - While soup is simmering, prepare your cheese mixture and cook your noodles until they are al dente.

7. Bottom Left - Add desired amount of cheesy goodness, noodles, and fresh basil to your lasagna soup.

8. Bottom Right - Stir to combine, you've got lasagna in a bowl! The ultimate comfort food.

What to Serve with Lasagna Soup

We love serving this with some warm french bread or a light green salad.

How to store Lasagna Soup with Cottage Cheese

It is best to store the cheese mixture, noodles, and soup base all separately in this recipe. Add each into an airtight container and store in the refrigerator for up to a week.

Can You Freeze Lasagna Soup?

Yes! The base of the soup can absolutely be frozen, but the cheesy mixture and the noodles are best made fresh.

Why am I cooking the noodles only to al dente?

Once you place the noodles in the soup they will start to absorb the liquid in the soup and begin to soften. For this reason I like to store my leftover noodles separately from my soup so they don't soak up all the broth overnight.

Instructions

  • Grab a large pot or stew pan. Heat oil over medium heat.
  • Add hamburger, and cook until just browned.
  • Add onions and cook until soft.
  • Next, add in garlic, oregano, red pepper flakes, and tomato paste and stir until well combined. Cook for a few minutes, until tomato paste turns brownish in color.
  • Add in tomatoes, chicken stock, and bay leaves and mix to combine. Bring mixture to a boil and then reduce heat to low and let simmer for 30 minutes.
  • While soup is simmering, cook and drain your noodles to al dente.
  • Then, in a separate small bowl combine all ingredients for your cheese mixture.
  • When ready to serve, add noodles and cheese into each bowl, then ladle soup over the top!
  • For best results, refrigerate leftover cheese, noodles and soup separately.

    I have always used ricotta cheese in this soup before, I was pleasantly surprised by how much better it tastes with cottage cheese. YUM!

    This really is the best soup!! You have all the same, great lasagna flavors in such a comforting soup & it's so delicious!

    1. Sure! Just cook your hamburger and then add all the soup ingredients to your crockpot and heat on low 3-4 hours. Add uncooked noodles for the last 20 minutes to cook. Garnish with cheese mixture and enjoy!
