So ever since baby number three came around (about six weeks ago) I've been trying really hard to be more healthy. I hate dieting, counting calories, etc. (who likes it?) So I've been working on just changing my lifestyle to a healthy, happy state that I can maintain.

A huge aspect of making healthy eating maintainable for me is that food still has to be filling and taste good! These shredded buffalo chicken bowls manage both of those things, with flair! My sister gave me the recipe, and I have eaten them at least twice a week ever since.. guilt-free!

How to Make Healthy Buffalo Chicken Bowls

Good news - these bowls are as easy to throw together as they are delicious to eat. There are basically two simple steps.

Step 1: Cook your buffalo chicken in the crock pot

Step 2: Mix together all your veggies in a large bowl and prepare to serve!

Healthy Chicken Bowls Pro Tips:

  • I like to use Slow Cooker Liners whenever I use my slow-cooker. They make cleaning up a breeze.
  • These bowls customize really well. If you don't like something, leave it out. If you'd like to add in something (my kids like when I use brown rice sometimes), add that in.
  • Store all leftovers in the fridge in airtight containers. Leftovers will last for 7 days in the refrigerator.

Buffalo Chicken Meal Prep

Make the chicken and shred it, drain and rinse corn and beans, and store those ingredients in the fridge. When you're ready to eat, throw some of the veggie mixture into a bowl, then slice avocado and tomatoes just before serving.

Healthy Crock Pot Buffalo Chicken Bowls

Healthy bowl recipes are my go to lately and these healthy buffalo chicken bowls cannot be beat!  Even my kids love them, and they are totally guilt free.

Instructions

  • Add chicken, garlic and hot sauce to slow cooker and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, shred it and set it aside.
  • Next, drain and rinse the corn and black beans. Add them to a bowl. Rinse and halve cherry tomatoes and add them to the bowl as well. Lastly, dice avocados and add them to the mix!

Assemble Bowls

  • Add the veggie mixture to a small bowl. Top with chicken, and finish with some ranch dressing.

    We've made this recipe so many times, it's about time I leave a review. Easy, delicious, and light but filling. We have two little kids and everyone can customize the bowls how they like. Highly recommend!!

  4. This recipe was very tasty but I believe your carb count to be very off. Two cans of black beans is over 40 carbs while a can of corn has approximately 20. Where does the total of 5 carbs come from?

    Where is this nutritional guide from ? I would love to know.

    1. Hey Carly! The nutrition information is calculated based off of serving sizes. We have this recipe broken up into 10 servings so it adds up all of the carbs, protein, etc. for the ingredients and then divides it by 10. If you eat 1/10th of the recipe, that should be right.

    We love buffalo chicken in this house, found a recipe using canned chicken, greek yogurt, ranch seasoning and hot sauce, I can eat it with a spoon!
    This is a great way to make it even more nutritious. But I found the flavor lacking a bit, I sprinkled a bit of dry ranch seasoning on the veggies and mixed them to help out ;)

    1. Yes! You can cook the chicken in the oven instead with buffalo sauce, or just toss shredded rotisserie chicken in buffalo sauce before putting it in the bowls!

        Try making buffalo chicken from canned chicken breast. I use one can, a couple table spoons greek yogurt, half of a ranch seasoning packet, and franks buffalo hot sauce to taste. It works great!

    2. I have zero patience waiting for my food to cook, using an InstaPot takes the cook time down by hours. 13 minutes on poultry/high pressure will cook 3 chicken breasts perfectly. Shred while still in pot, and sauté for 15 minutes to reduce sauce. AMAZING FLAVOR!!!!

  8. I just got a rotisserie chicken. Is there a way I can make the chicken for the dish with that and the hot sauce without cooking in the slow cooker? Thanks!

  9. I can’t find the Hidden Valley Greek Yogurt Seasoning anywhere. What can I substitute for it?

      1. You used the regular ranch dip mix with the Greek yogurt and milk? I cant find the Hidden Valley Greek version anywhere either.

      2. Yes! The greek yogurt ranch mix has not been easy to find lately, I'm wondering if it's discontinued. The regular ranch mix works great!
